Mexican Casserole

My family makes a really good Mexican casserole, but I was on pintrest the other day (surprise...not) and I found a different variation of the recipe and I decided to try it. It was tasty but in my opinion not as good as my family's original recipe. Here is the pintrest recipe.


Ingredients-

  • 1lb ground beef
  • 1 package taco seasoning
  • 1 can refried bean
  • 2 cups colby jack cheese (I used a mexican cheese blend)
  • 1 cup salsa
  • 1 can black olives drained and sliced
  • 1 tomato chopped
  • 2 cups corn chips
Directions-
  • In a skillet brown and drain the ground beef add the taco seasoning(and water as said on seasoning packet)  and finish cooking the ground beef
  • Heat the refried beats in a pan on medium heat, add 1 cup cheese and the salsa to the beans mix well.
  • Place crushed corn chips at the bottom of an 8x8 casserole dish. Pour the bean mixture over the chips and add the ground beef mixture to the top of the bean layer. Place the last cup of cheese on top of the meat. Top with the olives and green onions (optional)
  • Bake in the oven at 375 until the cheese is melted and the casserole is heated all they way through. Finish by topping with the chopped tomatoes.

Banana Muffins

When I see overly ripe bananas I take advantage and make something delicious. I tried a new recipe this week and I love it. I think it's one of my favorite banana recipes.
Ingredients-

  • 2/3 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2/3 cup mashed very ripe bananas (about 2 bananas)
  • 1 tsp vanilla
  • 1 2/3 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 cup sugar
  • 1/2 tsp ground cinnamon
  • 1/4 cup melted butter
Directions-
  • Heat oven to 375 degress, grease cupcake pan or line it with paper baking cups
  • In a medium bowl beat 2/3 cup sugar, oil, eggs. Add the vanilla and bananas. Stir in the the flour, baking soda, salt and ground cinnamon.
  • Fill muffin cups 2/3 full and bake for 17-21 minutes.
  • In a small bowl mix the 1/4 cup sugar and 1/2 tsp ground cinnamon, in a separate bowl melt butter.
  • Dip the cooked muffins in the butter then dip it into the sugar mixture.

It Doesn't Get Much Better Than This!

I saw these on Pintrest and then my mother convenient bought Oreo's, so I got to work making these delicious Oreo Chocolate Chip Cookies. (Unfortunately they got eaten so fast I couldn't get a picture so I just pulled one from the internet).
Ingredients-

  • 1 stick of butter (soft)
  • 6 Tbs sugar
  • 6 Tbs brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/4 cup flour
  • 1/2 tsp baking soda
  • 1/2 salt
  • 11 broken oreo cookies
  • 1 cup chocolate chips
Directions-
  • Preheat oven to 350 degrees, cream butter and sugars, then add vanilla and egg. 
  • Place flour, baking soda, and salt in a separate bowl. Slowly add dry ingredients to the wet ingredients and add the chocolate chips and oreo's to the mix.
  • Use a cookie scoop to place dough on a cookie sheet and cook for 10 minutes. Let cookies cool for 3 minutes before moving to a cooling rack

HAPPY VALENTINES DAY!

Happy Valentines Day, even though I don't have a boyfriend or a significant other it has already started out great for me and is only going to get better! I have a date with one of my favorite people, Madie Wells we are going to sushi and the vow! I made Red Velvet cupcakes with Cream Cheese frosting for all my valentines. I hope you all have a great day whether you're single or not.

Baby Shower

So I went to a baby shower over the weekend and I was asked to make mini cupcakes and cakepops. I had never made cakepops so I was excited to try something new. Here is a picture of how everything turned out. (for some odd reason some of the frosting on the mini cupcakes started to melt, super frustrating).

Name Change

So I changed the name of my blog (and the URL racheltharmon.blogspot.com) because it just didn't fit anymore. I post favorite recipes, and quotes, stories, pictures, music, basically a little bit a everything. A lot has changed for me in the past couple of months but its stuff that I've decided is too personal to share, at least for now...sorry. So instead of focusing just on the changes I just want to focus on a little bit of everything. Same blog basically...just a new more fitting name. But do remember to "always account for the variable of change."
