PB&Chocolate

I found a recipe yesterday that I had to try and let me tell you, these cookies are to DIE FOR!

Ingredients:


  • 1 box chocolate cake
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1 cup Reese's peanut butter chips 


Directions:


  • Pre-heat oven to 350 degrees
  • With a mixer combine chocolate cake mix, eggs and oil together
  • Add the peanut butter chips and mix on low
  • Roll dough into tablespoon size balls and place on a greased cookie sheet
  • Bake for 8-9 minutes
  • ENJOY!

Mug Cakes

Need a quick chocolate fix? Well here is a recipe for that takes literally 4 minutes for mug cakes. In my honest opinion it is not as cook as cake baked in the oven, but it is good enough!




Salted Caramel Mug Cake
Ingredients: {makes 1 mug cake}
4 tablespoons all purpose flour
4 tablespoons sugar
3 tablespoons unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg – beaten
3 tablespoons skim milk
1 tablespoon vegetable oil
2 salted caramels
Directions: 
1. Into a small bowl add: flour, sugar, cocoa, baking powder, salt, egg, milk, and vegetable oil. Mix to combine.
2. Pour mixture into a regular sized coffee mug. Drop caramels into center of mixture one at a time.
3. Microwave on high for one minute and 30 seconds. If needed {if cake batter is still gooey}, microwave on high for up to an additional 30 seconds.

Life with a Jar and a Cup of Coffee

When life seems too much to handle, just remember two things 
"A jar and two cups of coffee." 

A professor stood before his philosophy class
and had some items in front of him.
When the class began, wordlessly,
he picked up a very large and empty jar
and proceeded to fill it with golf balls.

He then asked the students if the jar was full.
They agreed it was.

The professor next picked up a box of sand and pour it into
the jar. Of course, the sand filled up everything else. He asked
once more if the jar was full.

The students answered with a unanimous "yes."

The professor then produced two cups of coffee from under the
table and poured the entire contents into the jar, effectively
filling the space between the grains of sand. The students
laughed.

"Now," said the professor, as the laughter subsided, "I want you 
to recognize that this jar represents your life.

The golf balls are the important things-your family, your children, 
your health, your friends, and your favorite passions-things that 
if everything else was lost and only they remained, your life
would still be full.

The pebbles are the other things that matter like your job, your
house, and your car. The sand is everything else-the small stuff.
'If you put the sand into the jar first,' He continued,
there is no room for the pebbles or the golf balls.
The same goes for life.

If you spend all your time and energy on the small stuff,
You will never have room for the things that are important to
you.

Pay attention to the things that are critical to your happiness.
Play with your children.
Take time to get medical checkups.
Take your partner out to dinner.

There will always be time to clean the house and fix the disposal.

'take care of the golf balls first--
The things that really matter.
Set your priorities. The rest is just sand.

One of the students raised her hand and inquired what the
coffee represented.

The professor smiled
'I'm glad you asked.'

It just goes to show you that no matter how full your life may 
seem,
There's always room for a couple cups of coffee with a friend.'

CARMELITAS



32 caramel squares, unwrapped
1/2 cup heavy cream
3/4 cup butter, melted
3/4 cup brown sugar, packed
1 cup flour
1 cup rolled oats
1 teaspoon baking soda
6 ounces semisweet chocolate chips

Combine caramels and cream in a small saucepan over low heat. Stir until completely smooth; set aside. In a separate bowl, combine melted butter, brown sugar, flour, oats, and baking soda. Pat half of the oatmeal mixture into the bottom of an 8x8" pan. Bake at 350 degrees for 10 minutes. Remove pan from oven and sprinkle chocolate chips over crust. Pour caramel mixture over chocolate chips. Crumble remaining oatmeal mixture over caramel. Return to oven and bake an additional 15-20 minutes, until the edges are lightly browned. Remove from oven and cool completely before cutting.
*A stint in the fridge will help them cool off if you're pinched for time. They shouldn't be served cold, but all of that molten caramel takes a long time to cool down. They should be stored and served at room temperature.

2012

2011 was a decent year, there are parts of it that I'm definitely glad to be leaving behind and never wanna relive, but there are also parts that I hope I can enjoy again in this new year. My two main new years resolutions are: Get more fit and Live 2012 in a way that I would wanna relive the year and I'll be sad to see it go in 2013. So cheers to the new year!
